About the Chef

Dermot Gannon, a native of Connemara, opened The Old Convent Country House in July of 2006. Together, with his wife Christine, they have created a unique destination for food lovers, focusing on their Irish Artisan Tasting Dinners. Dermot has a passion for working with Irish artisan ingredients and a love of slow cooking -  bringing both together in his signature Confit Company recipes.
